The recipe of June: l'Antica.

Here is the June's recipe from our chocolate school: a simple but unique cake of Ernst Knam.

Ingredients processing:

300g Shortcrust integral (see recipe below)
80 gr. Raspberry jam
300 g Black Ganache (see recipe below)

Grease and flour the pan, roll out the pastry and line the mold and low
to pierce any air bubbles; fill the bottom with jam. Bake at 175 ° C.
- Full shortbread
200 g butter
200 g sugar
75 g whole egg
3 g salt
vanilla
8 g baking powder
200 g flour weak
200g wholemeal flour

Working with the hook the butter with the sugar and vanilla. Joining up the eggs,
then the flour, whole wheat flour, baking powder and salt

-Chocolate Ganache
220 ml fresh cream
300 g dark chocolate
Bring the cream to a boil in a saucepan and pour over the chopped chocolate or tablets,
stir with a whisk until the ganache will not be completely emulsified.
