Travel in the Ghanaian cocoa! (Chapter 5): drying

After 6 days of fermentation, the cocoa beans are placed on these wooden planks and left in the sun until they reach the moisture minimum decided by the Cocoa Board. Usually the drying requires from 6 to 10 days. Every day, the seeds are mixed and cleaned from the skin in order to guarantee a single standard of production.
