Baumkuchen by Ernst Knam!

We also finish this month with a recipe from the king of chocolate .... Ernst Knam 


250 g of butter
100 g of sugar
1 vanilla stick
6 egg yolks (120 g)
3 g of salt
180 g of egg whites
150 g of sugar
100 g of marzipan
30 ml of amaretto
150 g of flour
100 g of starch
10 g of yeast

For the ganache:
300 ml of cream
500 g of dark chocolate

To complete:
300 g of jelly


1. Start preparing your cake by whipping the butter with the sugar, the vanilla and the salt then add the egg yolks and whisk them well. Mix the marzipan with the amaretto and gently mix the two compounds. After that, whip the egg whites with sugar.

2. Add the marzipan mixture with the whipped egg whites and gently add the sieved powders.

3. In the meantime, take the oven to the grill mode and, with a sac a poche, pour some dough into the 20cm ring. Make a layer of about 3 mm in height and cook for about 3 minutes until it becomes golden.

4. Put another layer of dough on the first layer and cook again for about 3 minutes. Repeat the operation 12 times.

5. Once all the layers have been cooked, let the cake cool and cut in the center to obtain a hole.

6. Dedicate yourself to the creation of the ganache then bring the cream to a boil, pour it over the chocolate, mixing. Heat the jelly in a saucepan with some water and brush the bumkuchen with the jelly.

7. To complete your cake, glaze the cake with the ganache.
