Caramel and Maldon salt

Here is the recipe for this month of July.


500 g dark chocolate

150 gr granulated sugar

30 gr glucose

150 g cream

100 gr Arriba milk chocolate 39% in pastilles

30 gr softened butter

3 gr Salt of Maldon


Prepare a dark chocolate shell with the mold and start preparing the ganache.

Caramelize sugar and glucose, add the previously heated cream and cook for 3 minutes.

Pour all over the chocolate, then emulsify obtaining a smooth and shiny ganache.

Allow to cool to 35 ° C, add the butter and Maldon salt.

Insert inside the shirt into the mold and proceed with its closing with the dark chocolate and let it crystallize. Cover and decorate with salt grains at the top.
