The chocolate made in Bolivia by the project "Selva Cacao" at the north of La Paz, once transformed, is tempered and moulded by Unica delivered to a Bolivian Consortium named "Del cacao silvestre al chocolate". Much of the cocoa is produced from wild plants of the Amazon Forest in Bolivia. It is really positive that not only in Canada (see post of yesterday!) the cocoa is worked to chocolate but also in the Bolivian comunity are beginning to make chocolate by cocoa beans harvested locally.

After 2 chocolate coating lines, a big number of Maestria and Unica to temper and make chocolate molds, we also custom-designed for this historical French customer some "mini" tanks of 50 kg very short to be included under the tunnel so that it is possible to save space and time production.

After Budapest, here is a new shop that has chosen 3 Mono again in Hungary. It is located in Nyiregyhaza, in the east of the country, and it is a new ice cream shop that is a part of a local innovative and beautiful franchise.
The internal computer of Mono allows the easy use by everybodies, also the people without having special knowledge on chocolate or a preparation of pastry school. This is the right answer to who want to start with an ice cream shop!

Talking about Las Vegas: next Febraury, 20, 21 and 22, Jean-Marie will hold a course in the School of Las Vegas dedicated to the production of chocolate starting from the cocoa beans.
All our Us costumers who wish to participate, have to put in contact with us that we will have some amazing promotions!
The course will be set to the storage of the beans arrived in the lab, roasting, cleaning and all subsequent processes up to the molding with a tempering machine.
